On the 7th day of Christmas we decided to spice up things a little bit with this unique spiced rum from Cambodia (41% abv) and Kampot Pepper, one of the most aromatic peppers in the world. Like most of the rums, this rum is also a combination of pot and column still, aged up to three years, and then matured for 6 months in the presence of Kampot pepper.
APPEARANCE
Clear with pale intensity showing its lemon to gold color.
NOSE
When glass is near the chin the Samai Kampot Pepper shows clean condition and medium to pronounced intensity on the nose. The Kampot pepper is the first aroma that comes. Of course there are notes of molasses and caramel, but lots of fruit aromas too. Like a mix of orange and lemon.
PALATE
On the palate is medium with warming texture and pronounced intensity. Kampot pepper is the first flavor that comes and the last one that leaves.The pleasant sting of pepper turns gently into the flavor of honey but it never leaves completely. Mixtures of chili and flowers are coming from “backstage” together with the long and very complex finish that reveals some ginger and wood notes.
CONCLUSION
Despite being spiced, it is not overly sweet, or maybe sweetness is covered with pepper flavor and aroma, but with such a complexity and balance between sweet, spicy and rum profile this spirit is outstanding.
